Our story

Slow sweets, made by hand

Varakh began with one rule from our grandmother's kitchen in Gujarat: never rush a sweet. We still roast every cashew, reduce every litre of milk and lay every sheet of silver by hand, in batches small enough to taste each one.

  • Made fresh every morning
  • No preservatives
  • Pure silver varakh

How it's made

From nut to box in one day

This is how one batch of kaju katli is made, step by step.

  1. Step 1. Time: 30 min

    Sort the nuts

Whole cashews and pistachios are sorted by hand. Broken pieces never make it in.

  2. Step 2. Time: 4 hrs

    Soak and grind

Cashews soak for four hours, then go through a stone grinder into a smooth, cool paste.

  3. Step 3. Time: 45 min

    Slow-cook in brass

The paste is stirred with sugar and cardamom in a brass kadai over a low flame until it leaves the sides.

  4. Step 4. Time: 20 min

    Roll and cut

Rolled while still warm to an even 6 mm, then cut into diamonds with one long knife.

  5. Step 5. Time: Same day

    Silver and pack

Each piece gets real silver varakh by hand and goes into its box the same day.
